Grill Rotisseries - Turning Good Food Great
A rotisseries should be used when you need an even heat throughout but not directly on a grill. It's called indirect grilling or spit roasting when you are cooking larger cuts of meat. Usually you slide the food onto the spit then secure the food with the rotisserie skewers and keep it six to twelve inches away from the heat source. Every rotisserie is different so make sure to follow the manufacturer's directions. As it turns slowly and cooks, the fat burns off and creates a self basting process as it cooks. It is very delicious and if you have ever been to the Carolinas you know that this is one of the most popular ways to cook.
